My Healthy Pancake Recipe

I like to eat things that are bad for me *lowers head in shame*. But I also want to live a long life free of health complications and medication. One thing I started doing years ago is making sure I always have breakfast.  Today I’m sharing my current fave with you. I’ve been making my own pancakes from scratch and they’re way healthier than the box formulas that I was raised on.

-Dry old fashioned oats
-0% fat plain Greek yogurt
-1/2 scoop of GNC brand lean shake powder
-2% fat milk
-Extra large eggs
-1-2 bananas
-Vanilla extract
-Ground cinnamon

Honestly, when I cook I rarely use measurements. For the pancakes I just blend everything until the taste and texture are just right. Mixing these ingredients by hand can work but your pancakes will be chunky, cook unevenly and probably crumble. Trust me, I tried it. Using a blender grinds those oats and makes a smooth batter.


These pancakes are packed with both fiber and protein so you’ll stay full for quite a while.

Healthier Prep
Cook pancakes in coconut oil and use pure agave instead of syrup. Depending on the ripeness of your bananas, the pancakes will be so sweet that you may not want syrup anyway.

Not So Healthy…
Cook pancakes in butter and top with your favorite syrup.

I make my pancake batter in batches and store them in the fridge since i eat them so often.

    YUM!! these look/sound so good!
